One of my favorite things about slow mornings is getting to take time and make coffee and enjoy a hearty breakfast. Lately, I’ve been trying different toppings for toast rather than jam or butter. This has been my favorite lately!
Egg, Avocado, + Goat Cheese on Toast
- 4 slices of whole grain bread
- 4 medium eggs
- 2 ripe avocados, sliced
- 1/4 cup goat cheese crumbles
- 1 tbs unsalted butter, softened
- non-stick cooking spray
Preheat oven to 400 degrees Fahrenheit.
First, spray 4 compartments of the cupcake tin with non-stick cooking spray. Crack each egg into the cups. Season each egg with salt and pepper. Bake for about 6-8 minutes or until done.
Peel, de-pit, and slice the avocados. Toast your bread to desired setting in your toaster.
Butter your toast and arrange slices of avocado on each piece. Sprinkle with goat cheese and top with a baked egg. Enjoy!
